Head to Tail Elven Tasting Dinner - June 20

Delve into the depths of culinary exploration at the Elven Head to Tail Tasting Dinner. June 20 a unique gastronomic journey awaits you, where every part of the fish is the star. From subtle flavors to bold textures, join us for an evening of discovery.

Chef's Compliment:

  • Fish skin crisp with dried fish ham, lyre mayo, greens
  • Perch head terrine with chips and sparkling wine mousse
  • Sea bass rib in rye batter with fermented garlic aioli

First snack:

  • Chopped seabass fillet, rhubarb sauce, peas and rose espuma

Hot snack:

  • Perch belly, strawberry glaze, roasted potatoes, greens

Main course:

  • Perch loin, smelt, butter salad, fresh cabbage, mussel sauce

Dessert:

  • Hazelnut biscuit with fish oil, grape cream, honey and chamomile and kefir sorbet
