- Sea bass rib in rye batter with fermented garlic aioli

- Chopped seabass fillet, rhubarb sauce, peas and rose espuma
Hot snack:
- Perch belly, strawberry glaze, roasted potatoes, greens
Main course:
- Perch loin, smelt, butter salad, fresh cabbage, mussel sauce
Dessert:
- Hazelnut biscuit with fish oil, grape cream, honey and chamomile and kefir sorbet
